Chicken may be considered a lean meat but its fat certainly is not lacking in flavour. Our schmaltz almost looks like a hybrid of coconut oil and ghee that is rich in nutrients and loaded with flavour that will enhance all of your favourite recipes.

Chicken Schmaltz is real fun to work with in the kitchen and keeps for months in your kitchen pantry. You can either store it in the fridge or freezer. Schmaltz has a great texture and will melt upon heating. It used to be the norm to cook with schmaltz. Just a couple of generations ago it was what people used to cook with as it has a very high smoke point as well as a long shelf life.

What can you do with halal chicken schmaltz?

You will love cooking with schmaltz. It adds a deep and rich chicken flavour to savoury dishes. You can use it for any savoury dish that requires cooking oil or butter – either in addition to those fats or as a substitute. Try it when cooking your next Sunday roast, flash frying seasonal greens (fry some fresh greens with some organic garlic slices, kosher salt, coarse black pepper) and use for stir-frying too.

It is useful for the following cooking techniques:

  • Roasting – Organic root and bulb vegetables, Halal and Tayyib, Organically-reared white meats, Wild game and Wild fish
  • Basting – For keeping roasting joints juicy whilst heating or cooking by pouring or brushing drippings over it repeatedly throughout the cooking process
  • Frying, Stir-frying, Shallow-frying, Deep-frying, Sauteéing – Organic root and bulb vegetables, Halal and Tayyib, Organically-reared white meats, Wild game and Wild fish
  • Infusions – Whilst your schmaltz is hot and fluid why not add herbs, spices or aromatics? Our suggestions include garlic, chilli flakes and thyme but rosemary, fresh chillies, oregano and shallots make for a superb schmaltz infusion. After the fat has become solid, all you need to do is warm it back to a liquid state and you have a delicious infusion for drizzling on soups, potatoes and other vegetables, pasta and/or bread.
